What This Equipment Is

A malt kiln is a grain-drying chamber used in commercial malthouses to dry germinated barley (green malt) into finished malt for brewing. Green malt is loaded onto a perforated kiln floor, and hot air is drawn through the bed over many hours at progressively rising temperature to drive off moisture and develop the malt’s color and flavor profile.

Large commercial malthouses operate kilns measured in tons of malt per batch. The kiln structure is brick-walled or insulated-metal, fitted with a direct-fired or indirect-heated furnace, a fan system delivering drying air through the bed, and ductwork removing humid exhaust. The furnace, ductwork, and casing historically used asbestos-bearing refractory and insulation.
