What This Equipment Is
A wort cooler is the brewhouse heat exchanger that takes boiled wort from the kettle / whirlpool and cools it from approximately 200°F down to the pitching temperature (50–70°F depending on the beer style) before adding yeast and routing to fermentation tanks. Wort coolers are typically plate heat exchangers in modern facilities; older breweries used shell-and-tube designs.
The cold side is fed by chilled water or glycol from the brewery refrigeration plant (see Brine Chillers). The hot wort side connects to brewhouse and racking piping; the cold side connects to refrigeration distribution. Both sides have gasketed plate frames or shell-and-tube heads, CIP isolation valves, and surrounding pipe insulation.

Why Wort-Cooler Work Was an Asbestos Exposure Pathway
Plate heat exchangers require periodic disassembly for gasket renewal and plate cleaning — a maintenance cycle that breaks every gasket in the stack and reseals with fresh material. Shell-and-tube wort coolers follow the standard heat-exchanger maintenance sequence (see Heat Exchangers). CIP system maintenance disturbs surrounding valve packing and gaskets.
